Aquafaba Pancakes, Beyond sausage and Spinach Omelets

First let's do 2 cups of pancake mix. Flour, sugar, leavening, baking soda, and pinch of salt.

One can of aquafaba. 2 3/4 of milk (soy, 1 1/2)

Mix gently with a fork. Don't over beat. Should be fully mixed with no clumps in 2 minutes. Let sit, heat up a pan of sausages.

I used a small dollop of oil. Flip after 2 minutes,cover with lid to steam and fully cook.

Clean out the pan gently. Use a scraper and leave in the bits. It will help season the pan for pancakes. Dollop methods are t best when using a laddle.

Flip it and wait for the bubles. if you are not sure sacrifice one pancake to the stove god)

Second flip. perfect coloration.

Use a bit of butter between cakes.
Always wait for the bubbles. Use the biggest spatula you have. It should freely float and move around. Get comfortable. Make the flip in one fluid motion.
