Stir-fried Bittermelon (Ampalaya) with Eggs (My Version of Cooking)

Happy Chinese New Year to those who celebrated this occasion. How's your weekend so far? It's a long weekend here in our country because of the holiday last Friday. And that was Chinese New Year. Tomorrow kids were back to school. I didn't catch the parade in Robinson yesterday like they do during Chinese new year. I just saw it in their stories on Facebook. I did grocery shopping yesterday and then went to wet market to buy vegetables. And do you know that what I bought was what I earned from earning platforms including here at Hive. I am very grateful to Hive and other platforms. It helps me a lot. That's what the gossipy neighbor doen't know, lol.

Anyways, it's really hard to think of what to cook for the family. Sometimes one member of the family likes the dish that was cooked, the other one doesn't. Only kids favorite is cooked eggs whether it's scrambled or sunny side up. That's why I added ampalaya vegetables to my cooked dish so that our food has some nutrients. This is one of my eldest' favorite dishes. Here's my simple dish I cooked that I want to share to you all.

Stir-fried Bittermelon (Ampalaya) with Eggs
(My Version of Cooking)

Ingredients

  • 1 Bitter Gourd or Bittermelon (Ampalaya)
  • 4 White Eggs
  • Garlic (Minced)
  • 1 Onion ( Big)
  • 1 Tomato

Cooking Instructions

  1. Prepare all the ingredients. Beat the eggs, then set aside.

  2. Cleaned and cut ampalaya into thin slices. Place the ampalaya in a small casserole.

  3. Add salt and lukewarm water then leave for 5 minutes to boil.

  4. Place the ampalaya in a cheesecloth then squeeze tightly until all liquid drips.

  5. Heat the pan and place the cooking oil.

  6. Saute the garlic, onion, and tomato.

  7. Add the ampalaya, mix well with the other ingredients.

  8. Put-in salt and pepper to taste.

  9. Pour over the ampalaya then let the eggs cook partially.

  10. Mix the egg with the other ingredients.

  11. Ready to serve hot. Share and Enjoy!
