Sweet Potato Harvest

The season is reaching it's end and frost is coming. So ahead of our two week camping trip, it's time to pull up our sweet potatoes!

Pulling up the vines and putting them in our compost, it exposes the dark dirt underneith. I can already see the sweep potatoes

Close up, we can see the large tubers sticking out. They're huge!

The compost from last year has turned very dark and rich, ready for next year's planting and harvesting. We'll have a lot more compost by next spring.

The sweet potatoes are stained by the dark soil, but are large and healthy looking. Next we wash them and dry them out before they're ready to eat.

We estimated about 50 pounds of sweet potatoes! We buy them from the grocery store for about $1.00/lb so this is a valuable harvest!

This post is making me think of roasted root vegetables. Cut sweet potatoes, carrots, swede, parsnips, beetroot - whatever you have to hand - into chunks. Toss them in some olive oil, put them in a roasting dish, add some thyme sprigs, and bake them in an oven till tender. You can add a tiny bit of salt when you serve it.

We are very pleased with the harvest. Last year we had many small potatoes, this year a few large ones... now to figure how to have many large! !BBH

We fry those like french fries but dip them in brown sugar first. It makes for a nice dessert. 😀

That is a nice haul! 50 pounds should last awhile for sure. That is one crop I've never planted, usually because they were so inexpensive in the store. Great job!
