I am fairly adventurous when it comes to different tastes. Textures? Not so much. I can't handle gelatinous,wriggly,stringy or slimy things. ugh.
But strange, seemingly conflicting tastes??? Let's go for it!
I'm KETO right now.
Yes, losing weight... again. LOL. (shush, @kenechukwu97!! lol) My Keto journey is a post for another time but let me just say - I think this time is actually different! Finally found what WORKED!!! It WILL be another post - so feel free to drop your name in the comment section if you've struggled with keto too - and I'll tag you with what worked for me!!! I'm down 17 pounds so far woo hooooo!)
Being Keto... sugar and refined carbs are a HUGE NO-NO! Those will kick you right out of ketosis, and halt all your lovely losses! But thanks to allulose, almond flour, coconut flour and others... you can eat lots of treats that are actually GOOD for you and don't give you sugar spikes (or equally bad.... insulin spikes!!!)
SO TAKE A LOOK AT THIS...
It's basically a KETO version of a "Raspberry Cheesecake meets Cannoli"?
I saw it - and the guy who does all the keto recipes that I love has AMAZING recipes - but for some reason, he hasn't hired a professional to take his photos! hahaa So if you think that my photos don't look very appetizing... hehehe believe me - his are hmmmm kinda odd looking LOLOL
I actually think mine looks pretty tasty! hahaha But no matter what it looks like - it has to TASTE good - right?
Ok - so let's start!

Guess what that crust is? It looks like a light pastry, right???
NOPE!!
Crust:
It is actually mozzarella cheese - melted and baked into a crispy circle. As it is still hot, you fold and shape into that "taco" shape. After it cools - you will fill with the cream, and the thick raspberry sauce!
Cream:
Softened cream cheese, allulose (sugar substitute) and heavy cream
Simply mix - and it's ready (follow his recipe for amounts)
Raspberry sauce:
Raspberries, lemon juice, water, and allulose
Simply stir, simmer, and let thicken. I simmered mine down until it was nice and thick! Then, I strained the seeds out. It was like a jam!!! SO flavorful!!!
I piped the filling in and then spooned the sauce on. It was SO SO SO yummy!
The second one - I put the cheese crisp into the microwave to crisp a bit more. It only took about a minute until it was sizzling. I folded it back over to take shape before it hardened. You can see this one is a bit darker. I would even go a BIT crispier for next time! I think the crispy shell with the soft cream is the right textures to shoot for!!
Now this next one, I thought hmmm is there anything else I can do to add a bit of flair? And I remembered these!!! Friends of ours made us homemade specialty salts! And they are SO nice to have for different meals. We use them as finishing seasonings! Take a look!
Guess which one I chose for my dessert??? I was thinking of 3 options here - either the citrus salt, the blueberry orange salt, or the vanilla salt. Since this dessert has berries - I thought the blueberry would be a nice compliment with a touch of orange!
Looks pretty good right??? The filling thickened more over time, so it was a really nice dessert to eat just like this! Time for a taste test!!!
This one is DEFINITELY a winner!!! It is so rich and tasty, you will not be sorry at all!!! With a cup of tea - or a coffee, mmmmmm such a treat! And the best thing is - you can eat this decadent thing and somehow lose weight week after week! hehehe
Don't worry - if you're struggling with losing weight - oh my gosh, let me tell you the best thing I've learned to pair with keto for a 1-2 punch in weight loss! I can't believe it's FINALLY working!!! (cheerleading outfit - here I come in December hehehehe 😆)
