Introduction
Hello vegan hivers, welcome to my blog. Have you heard of African salad 🥗? Maybe most of you knows about it or have heard if it. Is one of the meals we enjoy here in Nigeria i dont know of other African countries. This meal can be enjoyed or taking as a breakfast, lunch or for dinner 🍽️. Mind you, it doesn't last long once prepared so it's advisable to eat as soon as it being cooked. Before cooking the salad, we have what we called Abacha which was extracted from cassava tuber's. While the cassava tuber's it serves so many purposes like garri, fufu, abach, etc. All is our local food. The tuber's will be sliced in a smaller particles. Cooked and sun-dried. And we can use it to prepare African salad which supplies the body with carbohydrates. But with the mixture of vegetables, it's called a balance diet.
Ingredients
2 medium size of carrots 🥕
3 medium size of cucumber's 🥒
African oil been (ugba/ukpaka)
Fresh tomatoes 🍅 2 seeds
2 seeds of fresh pepper
Onions 🧅 1 ball
Dried Abacha 1/2 kilo
Palm 🪔 oil 5 tea spoon
Salt 🧂 2/2 teaspoon
Steps/procedures
Since it was a dried Abacha, i put it in a bowel and added water to it to soak and become soft. Make sure the water covers the abacha very well then added one teaspoon of salt for taste. Remember, it will take up to 20 minutes for it to get well and desired soft you needed.
Next was to was both the cucumbers, carrots and onions including the peppers.
Slice or chop them to your desired taste.
Withing 20 minutes, check the Abacha and sieve out from the water. Wash thoroughly to remove sand and dirts. Remember, i bought from the market.
Cooking 🍳🔪
Put the pot on top of the cooker and add the African oil been to it. Put salt to it including pepper and onions in a small quantity. Cover and allow to boil for 3 minutes for taste and for the oil been to be soften.
Add the abacha to it, add little more water to it to enable you mix it properly.
Immediately you put the abacha, add your palm or red oil to it. Mixe properly.
Add the chopped fresh pepper, tomatoes, carrots and cucumbers to it and off the fire before mixing them. The vegetables are best eaten raw that's why you need to off or quench the fire before mixing them.
After the last mixture, you enjoy your delicious meal.
The carrots are for taste including the fresh tomatoes. Not only that, carrots contains vitamin A which is very good for the eyes while fresh tomatoes and full of healthy nutrients. While cucumbers is very good for blood regulations, etc. The oil been is supplies energy, proteins and more. And they all added taste to the Abacha making it a healthy meal
While chopping the vegetables, i made some bold and separately which I later used to design the food making it looks appetizing and attractive just like you can see in the first picture and the last one here.
