Hello foodie, how are you? I hope you all are healthy. Today, I am sharing the recipe of corn spinach curry that I tried for the first time.
Spinach is very beneficial for our health as it contains a good amount of iron. However, we often get bored of eating dishes like spinach with potatoes or spinach paneer. That's why today I made spinach corn. It's very easy to make and tastes delicious.
Ingredients
- 50 grams of corn
- 200 grams of spinach
- 1 onion
- Some garlic cloves
- 1 red chili
- 1-inch piece of ginger
- Red chili powder
- Coriander powder
- Turmeric powder
- Garam masala
- Cooking oil
Method
- Wash and clean the spinach thoroughly and boil it in a pot.
- Meanwhile, finely chop the onion, garlic, and ginger and make a paste.
- Boil the corn in water until it becomes soft.
- Heat oil in a pan, add cumin seeds, and then add the onion-ginger-garlic paste. Add salt to taste.
Stir-fry until the mixture is well cooked and the oil separates.
Now add the dry spices like red chili powder, coriander powder, and turmeric powder. Mix well and cook until the oil separates again.
- While the spices are cooking, take out the spinach from hot water, put it in cold water for 2 minutes, and then blend it into a paste.
Once the spices are well-cooked, add the spinach paste to the pan and mix well.
Now add the boiled corn to the mixture and let it cook covered on low flame for 2 minutes.
- Finally, turn off the heat and your dish is ready to serve.
Enjoy hot and delicious spinach corn with roti, naan, or rice.
