Japanese curry and curry Udon weekend / 日本のカレーとカレーうどんな週末

I made Japanese curry for the first time in a long time, and the next day I enjoyed curry udon with the leftover curry. For people from outside Japan, curry may be the curry of India or Southeast Asia, but I would like to write about Japanese curry, which is also unique and delicious.

Last weekend, I went shopping with my daughter at a market where I have my stand once a month. It was also a chance for me to practice driving. There we bought Japanese croquettes sold by a friend of mine. They are my daughter's favorite, and of course also for me.

When I got home, I was thinking of a menu that goes well with croquettes, and I came up with croquette curry. So I made Japanese curry for the first time in a while.

The way I make is quite casual: I fried onions and carrots in oil with a pinch of salt. When the onions and carrots were nicely caramelized, I added grated garlic, ginger, and curry powder. Saute again a little with tomato paste (if not available, a little fresh tomatoes, canned tomatoes, tomato ketchup, or something tomato-like is fine), Shiokoji (salted malted rice or just salt may work), and a little bit of water. You can also add miso to add a secret Umami flavor as I wrote the other day. When the vegetables are tender, thicken with a bit of potato starch or flour dissolved in water and serve.

I know it's a really rough recipe, but it turns out delicious always. I think cooking is like that. I enjoyed the curry with croquettes.

Seeing that I had a bit of curry left over, I came up with the idea of making curry Udon the next day. I was so excited that I was looking forward to it the day before 😁 That much I like curry Udon.

Curry udon is nothing to write about ... just mix curry with Dashi soup stock and pour it over udon noodles. I had run out of kombu (kelp), so I used shiitake mushroom soup stock to dilute the curry from the previous day. The spinach is floating on the top because I made the dashi for my daughter, who doesn't like curry first and boiled the spinach together. It's OK, spinach would be delicious in curry udon.

Cook udon in parallel while making soup. Until a few years ago, in my area in Germany, Udon was only available in some organic stores or Asian stores, and I made it by myself, but nowadays I can easily buy it at local supermarkets. Thank goodness!

Pour some curry on top and voila! Ah, I think curry udon is a great invention of our Japanese ancestors who loved to mix and match. People from India, the land of curry, might be surprised to see this, but I love curry Udon. It's so tasty and comforting.

For my daughter who doesn't eat curry .... I prepared granny Udon. She has quite unique taste like a grandma. I like it. Better than too much into junk food.

先週末、久しぶりに日本のカレーを作り、翌日には残りのカレーを使ってカレーうどんを楽しみました。海外の人にとっては、カレーというと、インドや東南アジアのカレーかもしれませんが、日本のカレーも独特でおいしいよという記事を書こうと思います。

先週末普段出店しているマーケットに子供と買い物に行きました。運転の練習がてらです。そこでお友達が販売しているコロッケを買いました。子供の大好物です。

家帰ってコロッケに合うメニューを考えていてコロッケカレーを作りたくなりました。合うカレーと言えば日本のカレー。ということで久しぶりに日本のカレーをつくりました。

私の作り方はいたって適当で、玉ねぎと人参を塩少々と油で炒めて、良い感じの飴色になってきたら、おろしたニンニクと生姜、カレー粉を加えます。また少し炒めてトマトペースト(なければ生のトマト、トマト缶、トマトケチャップなどトマトな何かを少々)と塩麹、水をほんの少しだけ加えて煮ます。味噌で隠し味を加えても。野菜が柔らかくなったら水溶き片栗粉でとろみをつけて出来上がり。

適当ですね w でも美味しく仕上がりました。料理なんてそんなものだと思います。コロッケを添えていざ、いただきます😊

カレーのルーが少し余ったのを見て、翌日カレーうどんを作ることを思いつきました。前日から楽しみで楽しみで仕方がないほどわくわくしていたのは内緒です。

カレーうどんはなんてことない、カレーを出汁でといてうどんにかけて作るのみ。昆布を切らしていたので椎茸出汁で前日のカレーのルーをのばしました。ほうれん草が浮いているのは、先に子供用に出汁を作って一緒にほうれん草を茹でたからです。カレーうどんに入っても美味しいだろうしまあよし 😅

スープを作りながら並行してうどんを茹でます。数年前までは一部のオーガニックショップかアジアショップでしか手に入らず、自分で打っていたうどんも、最近では近所のスーパーで手軽に買えるようになりました。ありがたや!

カレーをかけて出来上がり。ああ!カレーうどんはミックス&マッチが大好きな日本の先人の大発明だと思います。

やっぱりおいしいですね。カレーの国、インドの人が聞いたらびっくりかもしれませんが、カレーうどん、大好きです。

カレーが食べられない子供には・・・渋々なうどんです。おばあちゃんみたいな子供。

Ah so, you are right, it might appear in Japanese anime. If you find the half done curry cubes at an Asian store, it’s even easy to make it. It’s nice Anime spread our culture all over the world 😊

I cook curry using the blocks found in the supermarket and it's already good. My partner likes it. But of course in the future I still want to make curry from scratch like how you did.
