Cooking Kamansi and its seeds

Kamansi is often mistakenly referred as a type of breadfruit but Kamansi is called as Breadnut in English.

Kamansi or breadnut has a spiky skin compared to breadfruit. Breadnut has seeds while you can hardly find seeds in breadfruit.

The last time we had Bayanihan we get bamboos in the creek where my father make it as his garden. He also planted Kamansi there and nowadays even he is gone, we are still harvesting the fruit of his labor.

While men are getting bamboos, I and my sister in law walk around and we saw some fallen mature breadnut. We are so glad seeing them because we are so interested on its seeds. It is edible.

Looking up we saw how huge this Kamansi tree is. We ask favor from the boys to get some fruit so we will have viand for our lunch later in church.


Cooking Kamansi with coconut milk


Ingredients:
15 more or less Kamansi or breadnut fruit
3 mature coconut
2 Onions
Spring onions
Lemon grass
Ginger
Salt
Water
Fried fish

Since we are having bayanihan that time, we also helped each other in preparing food for our lunch. I was not able to take pictures in every step but I will share to you how one of the women cooked it.

Step 1. Peel the Kamansi but not too thick.

Step 2. Slice the Kamansi according to your desired size and wash them thoroughly.

Step 3. Put water (enough to cook your kamansi) in the pot and let it boil.

While waiting for it to boil, prepare the other ingredients.

Step 4. Peel, wash, slice and prepare onions, spring onions, garlic, lemon grass as well as the mature coconut.

One of the men manually grate the coconut. After grating, remove its pure coconut milk. This is to be put when everything is cooked. Then, put another cups of water (depending on your desired quantity) to the grated coconut and get its coconut milk.

Step 5. Put the second coconut milk in the pot together with the spices like onions, garlic, lemon grass as well as the fried fish and let them boil.

Step 6. If the second coconut milk together with the spices are boiling, you can now add the sliced kamansi or breadnut. Add salt according to the desired taste. Cook it until tender.

Step 7. Add the pure coconut milk, let it boil and remove it on fire.

Your kamansi with coconut milk is now ready to be served. Serve while hot.

While walking around under the kamansi tree we found mature kamansi on the ground and we are so happy because it means it has a lot of seeds that we can cook and eat.

We started to remove the seeds from the almost rotten kamansi and others are already rotten. We found some small worms in it that makes my face looks like this, lol.

You might feel something but thinking how good it is after cooking we just never mind those worms from its peel but off course not in seeds. We only need the seeds.

Let's cook kamansi seeds

Ingredients:

Kamansi seeds
Water
Salt

Procedure:

Step 1. Wash the kamansi seeds well.

Step 2. Put it in the pot, add water that leveled with the seeds and add salt according to taste.

Step 3. Put it on fire and let it boiled until the seeds are tender.

Step 4. Seeds can be eaten now. Remove it's first peel which is the harder one then the second peel.

Step 5. Kamansi seeds can be eaten when the peel are removed. We can eat the white part of the kamansi seeds.

I am not sure if kamansi and kulo is the same. But it's similae on how to cook it with cococnut. Wah! Super delicious.

Magkaiba Sila sis. Kulo is breadfruit, kamansi is breadnut. Ang kulo walang malalaking seeds, sarap din Yun ilaga lang, para Ng tinapay heheheh. Nakakabusog din talaga ang kulo.

No! It's not a young jackfruit. It's a breadnut, others call it breadfruit but they're actually different. We locally call it kamansi.

I have never seen or heard of kamasi seeds. From afar it does look like breadfruit except it has a spindly exterior and large seeds which the breadfruit does not have.

Yes many are mistakenly call it breadfruit. As you have mentioned breadfruit have less spiky peel and it doesn't have big seeds. I hardly found seeds in breadfruit.

Ang una kong basa is kalamansi, kamansi pala HAHAHA. Nagtaka pa ko, niluluto ba ang seeds ng kalamansin Hahaha. Anyways ginataang kamansi is the best, sinasama namin ang seed sa pagluto kapag ganyan.
