Permit me to share this recipe with you, but before then, do you love to have fun while cooking?
Well, I have fun with the ingredients available in the kitchen, thinking of the next recipe to develop and creating mouth-watering meals. Anytime my Dad knows I am the one to cook, he would say, "What is she making for us this time", lol... like there is always a new recipe or meal that my magic fingers create.
Anyway, let's do some cooking friends.
Initially, I planned to cook jollof rice with some chopped vegetables and garnished with cucumber but on second thought, I decided to switch to something new and worth trying out. I imagined how delicious it would be.
I had some oven-roasted chicken stored in the freezer, so cooking this meal did not take much time. The main focus is on the blended vegetable sauce and can be eaten with rice or anything you desire like potatoes.
Here Are The Ingredients Needed
- Rice
- Oven-roasted chicken
- Cucumber (2 medium-sized)
- Carrots (a good amount)
- Green pepper
- Onions (4 medium sizes)
- Garlic (7 cloves)
- Ginger (medium size)
- Habanero red pepper
- Chicken broth
- Cooking oil (I used canola oil)
- Curry powder
- Seasoning cubes (3)
- Salt
- Lettuce (for food presentation)
Here are the vegetables
I usually simmer Chicken, oven-roast or broil them and store in the freezer, so before I started preparing the ingredients, I brought out the chicken broth and the oven-roasted chicken to defrost.
Preparation and Cooking Process
Step 1- I washed the vegetables and cleaned them properly ready to be blended.
Step 2- The vegetables were roughly blended in sets with the food processor in the photo above. You may be wondering where the second cucumber went to right? I stated above that I used 2 medium sizes, yes, I did. Actually, I had blended it before I made arrangement to take shots of the process of creating this recipe. The cucumbers were blended first and poured in a pot, then the green pepper,onions, garlic, ginger, habanero red pepper were blended and added to the pot as you can see below.
The last set that was blended is the carrots and also added to the pot. I decided to do it in sets because, they couldn't be blended at once, also, this gave a colourful photograph.
Step 3- After blending the vegetables, the gas was lit and the vegetables started to warm up. I added some quantity of the Chicken broth, the seasoning cubes, curry powder and salt into the pot as you can see below.
Step 4- I added the cooking oil to the pot and left it to cook for about 3 minutes and the blended vegetable sauce was ready.
Step 5- The rice was also cooking and got done some minutes after the sauce was ready.
Step 6- Our food is ready and served with the lettuce. You can see the food presentation.

Conclusion
One thing I like this sauce is that, it is very easy to make, nutritious, delicious and can be used to eat anything even bread. It's just an all-purpose sauce.
